Leftover Rescue: What To Do With Extra Cooked Rice

 This week I made too much rice.

Leftover rice sticks with us like a really loyal dog. Even if I ignore it for days, it remains faithfully present, just waiting for someone to notice it.

Or throw it out (and that’s where the dog metaphor ends).

So when I made waaay too much for our stir fry earlier this week, I decided to do something with it besides think up another dinner I could add rice to.

This quick and easy fix for leftover rice made a delicious breakfast!:

INGREDIENTS:

1. Leftover rice

2. Milk (as much as you want to cover the rice; it won’t cook down) – I used dry milk powder and water because that’s what we had, and I’m allergic to most dairy products. Usually I would use almond or hemp milk that I bought marked down at Kroger!

3. Whatever toppings you have on hand: vanilla, brown sugar, honey, chopped nuts, dried fruit, butter – I used vanilla, a little brown sugar, and a handful of trail mix that had assorted nuts, pumpkin seeds, and dried cranberries.

SUPER EASY DIRECTIONS:

1. Combine all ingredients in sauce pan

2. Heat, stirring occasionally

3. Serve warm

OR

1. Combine all ingredients in microwave-safe bowl

2. Heat in microwave, stirring well before serving

I found that cooking the nuts along with the rice instead of adding them at the end left them delightfully soft and blended the flavors deliciously. And since I buy whole grain brown rice, this breakfast not only used up leftovers, but also provided healthy grains. Yay for multi-tasking!

Another scrumptious fix for leftover rice is rice pudding. This takes a little more time and effort, but you can find a recipe from Hillbilly Housewife right here.

    Tightwad Gazette has a muffin recipe that will use whatever you have on hand. She says you can use leftover rice in the muffins. I have not tried it myself, but am intrigued by the thought. We usually do a faux fried rice with any leftover rice we have around. Or my 3-year-old eats it…she’s not that picky about it, thankfully.

      @Kimberly I’d like to try that out – we’re muffin fans here. And I sure hope Ray is just as obliging about leftovers when he turns three :-) ! We’re just breaking into solids….
