I practically had to fight for a salad like this when I was growing up. If we passed it around the table (yes, we ate dinner like a Brady Bunch family) and it reached my brothers before it got to me, I was sunk. Unless I intervened there was a good possibility the bowl would be empty aside from a few wet leaves resolutely sticking to the sides of the bowl.
But that was okay because once you made the dressing, this salad only took a few minutes to prepare.
Of course anyone can throw together a caesar salad. But not everyone made homemade dressing to go with it. And that, my dear, made all the difference for my brothers. That made the difference between a few wet leaves sticking to the sides of the bowl and a whole bowl of soggy lettuce.
My mom and other women I knew served this salad with romaine and croutons, which is delicious. I figure we have enough carbs in our diet, so I serve it with chopped chicken. And my carb-loving husband is a big fan of this salad so I know it must be good.
We also use it as a staple lunch he takes to work, and it tastes fantastic as a chicken caesar wrap.
So enjoy this salad any of those ways. Or just eat it by the salad bowlful, like my family did.
Creamy Caesar Salad Dressing
Adapted from the Whole Foods for the Whole Family Cookbook (I’m a huge fan of this book. Lots of make-it-yourself recipes with basic ingredients)
Makes about 2 cups of dressing
INGREDIENTS
- 1 C. Mayonnaise
- 2 1/2 T. Lemon juice (can use vinegar in a pinch)
- 1 t. Salt
- 1 t. Pepper
- 2 T. Worcestershire sauce (can use soy sauce in a pinch)
- 3/4 C. Grated parmesan cheese
- 1/8 – 1/4 C. Water
- 1/4 t. Garlic powder
DIRECTIONS
- Place all ingredients inside a large mason jar
- Screw lid securely on the jar and shake vigorously to combine ingredients
- Pour desired amount on salad and store in refrigerator

I just made this tonight-it was my first attempt ever at a homemade dressing. This is amazing!!!! I can’t believe how yummy this was.

I’m 10 weeks pregnant with Baby #3 and always have such a hard time eating salad during my first trimester. I made some of this to go with some romaine at lunch today and it was delicious! Thanks for the recipe!
