I need to apologize for the severe lack of new recipes lately. The truth is (and I’m sure many of you can relate), this season of nausea begs for easy, classic meals that I can whip up with minimal effort and minimal brain power. Which means I’ve been referring back to this site for several of my favorite recipes, including this frugal vegetable soup and mush.
Hopefully in a few short weeks I’ll be back in action, testing recipes and posting them back to you as soon as they receive a frugal/healthy/delicious stamp of approval.
Meanwhile, I’m going to share a snack that slips into the cheap and delicious category, but doesn’t get to be called healthy – at least by my standards. Honestly, how healthy can these babies be? No veggies. No fruit. No whole grains. Not much protein.
But I’ll tell you what they don’t have. If you do your shopping right, they don’t have any artificial colors, partially hydrogenated-whatever, or high fructose-anything. On some days that’s enough for me.
And one of my favorite parts about this snack? It takes 3 minutes to make.
3-Minute Nachos
INGREDIENTS
- Tortilla chips*
- Salsa* (your choice of heat)
- Shredded cheese* (cheddar or Mexican blend)
- Optional: chopped black olives, beans, taco meat
DIRECTIONS
- On a large cookie sheet, spread as many chips as you can in a single layer
- Drop dollops of salsa on chips, coating them as evenly as possible, but not smothering them (yeah, don’t you love my specific directions?)
- Evenly sprinkle optional toppings over the chips
- Evenly sprinkle cheese over the chips
- Broil for 2 minutes or bake at 350 degrees Fahrenheit for 5-10 minutes, until cheese is melted
* If you want to make sure this snack has none of the artificial colors, etc., that I mentioned above, remember to read the lists of ingredients on each item, ensuring that there isn’t a hidden chemical that you weren’t expecting.

Yum! This is one of my favorite snacks. I do it in the microwave so that I don’t have to wait for the oven.

I could eat this every stinkin day for a snack (ummm, I have!). Chips, cheese, microwave, top with FRESH chopped tomatoes onions and a bit of jalepano, a little dallop of sour cream…yummmm (and tell the teens, NO, this is MINE, make your own!) … I don’t think this falls into the worse of snacks category
