I’ll admit (at the risk of my mother seeing this post) that I was skeptical at first.
While I thoroughly enjoy scrambled eggs with sautéed vegetables like peppers, asparagus, and tomatoes, this new combination had me baffled. Who would’ve imagined that sweet potatoes, celery, and beans would make such a tasty breakfast. And yet, they do.
My mother found this recipe several months ago, and after she and my sister got hooked on it, I followed suite. It’s a brilliant way to start the morning with protein without using too many eggs (which are a precious commodity at our house), and making vegetables for breakfast actually taste good. Even my toddler eats it, which is saying something (more on my toddler’s eating habits here).
This is certainly more expensive than a bowl of oatmeal. However, while oatmeal is great for the little curly-haired bundle of energy that bounces through the house, I need to start my day with something other than carbs. Otherwise, I’m almost guaranteed to crash on the bed mid-afternoon… or at least guaranteed to wish I could.
Since vegetables and beans are more frugal for us than eggs right now, this breakfast literally fits the bill beautifully.
Sweet & Spicy Eggs & Veggies
Serves 6 (or serves me for breakfast for several days)
INGREDIENTS FOR VEGETABLE HASH:
- 1/3 cup onion, chopped
- 1/2 cup celery, chopped
- 2 cups sweet potato, chopped
- 2/3 cup sweet corn (fresh or frozen)
- 1-2 cups beans, cooked (black, pinto or great northern)
- Optional:
- 2 cups greens, chopped (spinach, kale, swiss chard, turnip greens, etc.)
- 1/2 cup bell pepper, chopped
INGREDIENTS FOR EACH SERVING:
- 1/2 cup vegetables hash
- 2-3 tablespoons salsa
- 1 egg, fried (yolk cooked)
DIRECTIONS:
- Sauté onions, celery, and sweet potato in a large skillet until potato is almost cooked through
- Add greens and beans and cook until greens are wilted and beans are warm through
- For each plate, serve vegetables topped with salsa and a fried egg
COST:
- Vegetables – 1.25 – 1.50 (depends on if I add optional veggies)
- Beans – .15 – .25 (depending on what kind of beans)
- Salsa – .45
- Eggs – .50 – 1.50 (depending on what eggs I buy)
Total = 2.35 – 3.70
Since this meal serves six, it could feed the three of us for two meals, which means it costs us about 1.50 per meal.
My mom and I like to cook up a big skillet of this at the beginning of the week, then pop it into the fridge. That makes the morning breakfast a little quicker, since all I need to do is scoop out a little bit and reheat it along with the frying eggs.
