This post is for everyone who left the butter and sugar season promising themselves they would eat better this year. And this is also for those of you who somehow made it through unscathed, still skinny, but ready to whip your spending and eating habits into even better shape.
I have a problem with store bought dressing on my salad. As delicious as it tastes, I feel like all of the unhealthy ingredients counteract some of the look-I’m-a-good-girl-I’m-eating-a-salad points I get from filling my plate with yard work.
So I try to avoid buying salad dressing. Period. And it has opened up an entire world of amazing flavors that come from homemade salad dressing. Chris loves homemade Italian dressing, and guests rave over our Caesar Salad.
My only problem is that they don’t keep very long so I have to plan to have a lot of salad several days in a row. This isn’t a huge problem; I mean for goodness’ sake if our biggest problem in life is that we have to eat a lot of salad to prevent the dressing from going bad, we don’t have much to complain about.
But this simple dressing solves that so-called problem. Four ingredients that can be mixed in with the salad. Does it get any easier?
Simple Oil & Vinegar Dressing
INGREDIENTS:
- Drizzle of olive oil
- Smaller drizzle of some kind of vinegar (I like balsamic or apple cider)
- Salt and pepper to taste
- Optional: squirt of lemon or lime juice
DIRECTIONS:
- Pour all ingredients on top of your salad
- Toss salad together, combining the dressing ingredients
This recipe is a classic, and if I was making a list of essential recipes for the cheapskate-healthy-minimalist kitchen, this dressing would be on it.

recipes (Greek) from my Mom.

This looks like a wonderful way to just enjoy the flavors of your salad, but I love fresh spinach.
I only made my own salad dressing once, blackberry vinaigrette. It was oh, so good. That year was a good blackberry year.
I’m going to have to start a pinterest account just for the sake of recipes like this.

This is a great dressing combination. Although, I have such an addiction to making the dressings themselves, I typically combine the ingredients in a tiny bottle and shake well. Even the simplest dressings still get put in bottles around here. Silly, right?
