Lots of love. Lots of optimism. Lots of hard work to make ends meet.

When we first got married, we lived in a renovated shed and had a budget that matched. Even after I got a job, we decided to trim our food consumption to $25/week in an effort to make ends meet. During this time, I realized that the grocery and household expenses were the only necessities over which we had an incredible amount of control. For instance, although we could shop around for gas prices, there was only so much we could do to cut down how much we spent on gas. Same with utilities (weekly showers, anyone?) and rent.

But groceries? I could do some serious bargain shopping for our groceries.

Nevertheless, there was a wild card in this desperately frugal mix.

I had spent the last few years falling in love with not only my husband but with healthy, minimally processed, whole food. Whole Foods Market? Yeah, baby. I am so there. Farmer’s Markets? In my element. Chickens in the yard and a garden out back? Maybe someday.

Baby Cheapskate Cook TCC

Being a little bit of a health nut and a little bit of a would-be hippie probably contributed to my affinity for healthy, earth-friendly food. And I took our tiny budget as a challenge to my thriftiness and ingenuity in the kitchen.

So the cheapskate cook was born.

 A couple of years and one baby later I’m still a foodie on a budget. And I still enjoy it.
